  • Mandarines caramélisées

Slowly Desiccate thin slices of sweet tangerin. When crispy, dip lightly into caramel, and set aside. Prepare the verrines in advance with mascarpone mousse, red berries, passion fruit coulis and mint. At the time of serving use a tangerine slice to deposit a sliver of organic mandarin sorbet, and cop with caramelized mandarin slices
