In a little shortcrust shell, arrange slices of apples in a flower shape, bake with sugar and butter.Pour ganache into a spoon and decorate with sugar. When serving, add the various fillings and chip the sorbet in little pieces. It is possible to use black cherries from the Basque country (Itxassou), slightly caramelized or cooked in syrup.
