RICE PUDDING ICE CREAM BY PHILIPPE URRACA, CARAMELISED CARROT PEELING, SALTED CARAMEL SAUCE AND WHITE CHOCOLATE ROCHER
  • Crème glacée Riz au lait – 92539
  • Lamelles de carottes caramélisées
  • Sauce caramel salé – 90056
  • Mini rocher de chocolat blanc – 100027

Caramelize the heritage carrots strips, cool them on a circle to shape them, and do the same with the remaining caramel from the pan.

In the bottom of the plate, spread the salted caramel sauce with a spatula, add some “mini white rock” and drop the Rice pudding ice cream, just before serving.
