This dessert from the Veneto region has become a classic of Italian pastry making.
Generally speaking, this dessert is made of Genoese sponge cake or sponge finger stacked in layers that are separated with mascarpone. Everything comes together with an aromatic coffee cream, liqueur, and cocoa powder or shavings.
Made with Marasala (an Italian wine liqueur) and mascarpone ice cream, to which we add bits of coffee sponge cake and a chocolate-coffee sauce, this creamy ice cream possesses all the right hallmarks of Italy. The sponge cake bits provide an original, gourmet texture.
