Ice cream
This specialty of Provence is made from sugar, almond powder, and candied fruit, and is a particularly popular treat. It comes in the form of a confectionary whose soft paste is placed on a wafer. The whole thing is covered with egg-based 'royal icing'.
A cookie cutter gives it the tapered shape of an almond before it is baked at a low temperature to give it the shiny reflection for which it is famous.
